From the good folks who introduced the popular Korean fried chicken chain Chir Chir Fusion Chicken Factory and customisable meat stews outfit Masizzim to Singapore, comes Kogane Yama (Golden Mountain), the group’s very first original dining concept
housed at Bugis Junction.
The 44-seater eatery, launched on 4th June 2017 pays homage to the humble and satisfying tendon bowl. Each serving features a lavish heap of mouth-watering, perfectly fried, golden-brown pieces of tempura atop a mound of sweet Japanese rice and is reminiscent of the sloping valleys and mountains found in Japan. The unbelievably crisp coating is achieved by using a light batter consisting premium Japanese tempura flour with fish seasoning and each piece is skilfully deep-fried in a soybean and sesame oil blend.
STEP 1:
Customers start their journey into tendon heaven by first picking their preferred bowl and although there are only four to choose from, a decision may not be easy to come by.
Chicken Bowl S$13.80 – For the diner that loves chicken, this bowl features tender fillets battered and fried to perfection and comes with select vegetable tempura.
Prawn Bowl S$13.80 – Seafood enthusiasts will not be able to resist the generous pieces of juicy prawn tempura accompanied by select vegetable tempura.
Vegetable Bowl S$11.80 – A fan of vegetables will delight in this bowl loaded with an assortment of perfectly battered veggies such as long beans, carrot, shiitake and enoki mushrooms, sweet potato, green bell pepper and more.
Mixed Bowl S$15.80 – For those who must have EVERYTHING in their tendon bowl, the obvious choice is this version featuring crispy tempura prawns, chicken fillet, long beans, carrot, shiitake and enoki mushrooms, sweet potato, green bell pepper, seaweed, shiso leaf and a dollop of ebiko (prawn roe).
STEP 2:
Diners can choose to have their tempura with classic Japanese short-grain rice or top up a dollar to enjoy it with either Soba (+S$1) or thin Udon (+S$1) – both steeped in a clear and fragrant dashi broth.
STEP 3:
Unlike any other tendon, customisation goes a step further with the selection of one of FOUR tentsuyu sauces – a sweet-and-savoury homemade blend of garlic, sesame oil, and premium Japanese shoyu (soya sauce). The non-spicy version is perfect for kids and those who like playing it safe! For the more audacious diner, the other three different levels of heat are created by adding bird’s eye chilli and Capsaicin sauce to heighten the fieriness of the sauces.
ADD-ONS:
To build around the tendon bowl, patrons can add on $2 to create a set meal which includes Chawanmushi (à la carte S$2) and Miso Soup (à la carte S$1.50).
